Healthy Recipe of the Week – Cauliflower Pizza Crust

Confession: two months ago, if you had told me that I would write healthy food recipes for a health club, I might have laughed at you. Not for lack of kitchen experience, but for lack of *healthy* kitchen experience. Two months ago, all of my recipes included liberal amounts of butter, full fat cheese and pasta. Lots of pasta. I am not sure how, but something clicked two months ago and I realized that I can use my kitchen knowledge for good. I changed the way I ate, started moving more, and drank a ton of water and I sit here today 20lbs lighter. I don’t claim to be a nutritionist or a healthy food guru but I am happy to be here to share some of the recipes that helped my family get healthy while still looking forward to dinner time.

The new favorite recipe in my house is cauliflower pizza. I can say that before I made this, my cauliflower experience was limited to salad bar pickings. I was skeptical about cauliflower, but missing pizza so bad, I was willing to try anything. I made it one night and it was a huge hit, my 3yr old didn’t question it for a minute!
What you will need for one personal pizza…

1 cup grated raw cauliflower (you can use frozen, just make sure you ring the extra moisture out)
1/4 cup egg beaters
1/4 cup shredded cheddar cheese
seasonings (i used Italian)

Preheat oven to 425 degrees

Combine cauliflower, eggs and cheese until mixed completely. Spoon mixture into a pie pan lined with parchment paper, use the back of a spoon to make sure it is evenly spread.
Bake for 30 minutes. Carefully flip crust and bake an additional 10-15 minutes. Let it get burny on the edges.
Add sauce and toppings, then place under the broiler until cheese is melted.

*I have also used this recipe to make bruschetta for a party appetizer. It went faster then the naughty options!
*These can be frozen to use later.
*Try using this recipe to make a bun for a turkey burger.
*This recipe can also make delicious garlic cheese “breadsticks”
