Breakfast, they say, is the most important meal of the day and you should start off your day with a meal containing fiber, healthy fats and protein. One of these breakfast foods that’s protein-rich is Greek yogurt; but there are other great ways to serve this for breakfast than just mixed with granola. So here are two wonderful healthy recipes to get you going in the mornings!
Breakfast Berry Enchiladas (Serves 2)
Ingredients:
- ¾ c. of fresh blueberries
- ¾ c. of fresh strawberries
- 1 5.6 oz. non-fat Greek yogurt, berry flavor
- ¼ c. of 1% milk
- ¼ tsp. of ground nutmeg
- 2 tbsp. of toasted almonds, sliced
- 1 egg
- ½ tsp. of ground cinnamon
- 2 8-inch tortillas, whole wheat
- 1 tsp. of confectioner’s sugar
Instructions:
In a small bowl, the yogurt, blueberries and strawberries should be mixed together gently until blended.
In a shallow bowl, blend the milk, nutmeg, egg and cinnamon; whisk with a fork until all ingredients are combined.
Grab a medium-sized non-stick skillet and heat over medium-high heat.
Dunk one tortilla in the egg mixture and carefully turn to coat the other side; let the extra mixture drip off then place it gently in the heated skillet. Cook each side for 2 minutes or until it’s golden brown. Repeat this step for the second tortilla.
Ladle half of the berry yogurt mix in the middle of each tortilla. 1 tbsp. of almonds should then be sprinkled on top of the mixture in each tortilla; then roll up both tortillas in a cigar shape to form enchiladas. Place each enchilada on a dish and dust each with a ½ tsp. of confectioner’s sugar.
Scandinavian Eggs Benedict with Yogurt Sauce (Serves 2)
Ingredients:
- ⅛ of powdered turmeric
- Juice of half a lemon
- 1 pinch of white pepper
- 2 English muffins, whole wheat, cut in half and toasted
- 4 poached eggs
- 1 c. of plain Greek yogurt, low-fat
- 1 tbsp. of fresh dill, chopped
- 1 tsp. of horseradish
- 4 slices of smoked salmon
- Salt to season
- Chopped chives for garnish (optional)
Instructions:
In a medium-sized bowl, whisk turmeric and yogurt until the yogurt is a pale shade of gold. Whisk in lemon juice, pepper, dill, horseradish and salt until well blended. Set aside at room temperature while you poach the eggs.
On top of each half of English muffin put 1 slice of salmon then add 1 poached egg and a small spoonful of yogurt sauce. If you wish, you can warm the sauce in your microwave for 30 seconds.
Scatter the chopped chives on top if you desire. Enjoy!
