Seasonal Eating in June: What to Eat

Summer is here and with that, comes AMAZING seasonal produce! Starting in June, the farmers markets are overflowing with fresh fruits and vegetables which makes it the perfect opportunity to try new things in fun and different ways! Here are some great fruits and veggies to look for during the month of June:

Asparagus

Have you ever tried a cold asparagus salad? Blanch the asparagus, chill, then toss with lemon juice, balsamic vinegar and a little salt and pepper. It is absolutely delicious and refreshing for a hot Summer day!

Stone Fruit

Peaches, nectarines, plums are all amazing stone fruits that can be enjoyed hot or cold. Try throwing them on the grill for a different flavor and slice onto flatbread with goat cheese and a drizzle of honey.

Carrots

In my house, we love breakfast, especially pancakes. Grate some carrots, add to your favorite pancake mix with a few dashes of pumpkin pie spice and call them carrot cake pancakes. Easy, fun and sneaks in a veggie serving!

Cucumbers

Pickling cucumbers is easy and tastes great! All you need is white vinegar, a little sugar, fresh dill and water. You can even add slices of red onions for more of a tangy kick.

Visit your local produce stands and farmers markets for amazing seasonal produce, plus, they are so knowledgeable with recipes and different ways to use fruits and veggies. Ask lots of questions and have fun!
